Panzanella - Italian bread salad

An easy Italian meal using stale bread! Sounds delicious, doesn't it? The Panzanella salad is made with Looye JOYN tomatoes, sweet peppers & olives. However, many versions are possible - in short, you can vary!

  • PREPARATION

    1. Any Italian leftovers, for example: red onion anchovy fillets capers grilled peppers olives First of all: make sure your bread is stale. If you don't have stale bread, tear a fresh focaccia or ciabatta into pieces and bake at 175 °C in the oven (without oil!) for about fifteen minutes.

    2. Roughly chop the Looye JOYN tomatoes, Chop the other ingredients you want to use, such as grilled peppers, onion, etc.

    3. Tear the stale bread in pieces.

  • METHOD

    1. Whisk the olive oil, vinegar and a pinch of salt and pepper together.

    2. Mix the Looye JOYN tomatoes, bread, vegetables and dressing together. Leave for an hour to allow all the flavours to infuse the bread properly.

    3. Finally, just before serving, finish it off with fresh basil.
