Chimichurri with Looye JOYN tomatoes

PREPARATION
Peel and finely chop the onion and garlic.
Cut the chili in half, remove the seeds and slice into wafer-thin strips.
Chop the parsley as finely as possible.
Quarter the Looye JOYN tomatoes and remove the seeds. Cut the wedges into small cubes.
HOW TO PREPARE
Put the onion, garlic, chili, parsley, Looye JOYN tomatoes and oregano in a bowl. Add the red wine vinegar and olive oil.
Stir everything together and season with salt and pepper.
Cover the bowl and leave to rest before serving to allow the flavours to infuse.
TIP
Serve the chimichurri with a steak or other tasty piece of beef (côte de boeuf) from the barbecue or charcoal grill, or simply pan-fried! Also delicious in summer with roast or braised beef, served cold.
