This vegetarian 'cowboy caviar' is made from Looye JOYN® tomatoes, onion, beans, corn and sweet pepper. Easy and quick to prepare, and packed with flavour!

PREPARATION
Cut the Looye JOYN® tomatoes into quarters and remove the seeds if desired. Cut the segments into ½ cm (¼ in.) cubes.
Remove the seeds from the sweet pepper and cut it into strips and then into cubes.
Peel the red onion and chop into cubes the same size as the tomato and the sweet pepper.
Drain the corn kernels, kidney beans and black beans in a sieve and rinse with cold water.
Peel and finely chop the garlic.
Thinly slice the spring onion and finely chop the coriander.
Cut the chili in half, remove the seeds and slice into wafer-thin strips.
PREPARATION DRESSING
Whisk the olive oil, vinegar, garlic, sugar, ½ tsp salt and ½ tsp pepper in a bowl.
Combine the Looye JOYN tomatoes, red onion, black beans, kidney beans, corn, red pepper, chili pepper and coriander.
Add the dressing, mix and season to taste with salt and pepper. Cover with plastic foil and refrigerate for 2 hours.
Mix well before serving. Sprinkle with spring onions and serve with tortilla chips.
