Looye Honeytomatoes preserved in herbed olive oil

PREPARATION
Peel and slice the garlic.
METHOD
Pre-heat the oven to 100°C.
Put the Looye Honeytomatoes, garlic, peppercorns and herbs in the glass jar. Press the Looye Honeytomatoes together snugly.
When you have filled the jar, sprinkle some salt on top of the tomatoes.
Fill the jar with olive oil and close with the lid. Cover the lid with aluminium foil.
Fill a deep baking tin with water so that the glass jar is half submerged in the water.
Put it in the oven for an hour. Allow the jar to cool and keep it in a cupboard until you are ready to use it.
