Onion tart in muffin form

Do you want to surprise your friends with a savoury muffin with fried onions, Looye JOYN tomatoes and fried bacon? This delicious tart can be festively served with sour cream and thyme.

PREPARATION
For the dough, mix the flour, yeast and salt in a bowl.
Add the lukewarm water and oil. Knead everything together thoroughly. Cover the dough and let it rise for about 30 minutes.
Peel the onions and slice into half moons.
Cut the Looye Honeytomatoes in wedges.
Fry the bacon cubes in a hot pan over medium heat. Once the bacon is golden brown, remove it from the pan.
Gently fry the onions and Looye Honeytomatoes in the remaining fat. Add the thyme and some water as soon as the tomatoes start to colour. Cover and simmer gently for about 10 minutes. Then add the bacon cubes. Remove the pan from the heat and allow to cool.
Beat the eggs and stir in the sour cream. Mix with the lukewarm onions and bacon.
METHOD
Pre-heat the oven to 200°C.
Grease six muffin cups with some olive oil.
Knead the dough and divide into 6 portions. Roll it out and use to cover the greased muffin cups.
Divide the vegetable and egg mixture over the six cups.
Put the muffin cups in the preheated oven and bake for 15 minutes. After 15 minutes of cooking, switch to fan-assisted mode for another 4-6 minutes to brown the onion tarts.
Serve warm, lukewarm or cold.
