Sambal goreng from Looye JOYN tomatoes

If you fancy adding some spice your dishes, Try making your own sambal goreng with delicious Looye JOYN tomatoes, to serve with Indonesian dishes.

PREPARATION
Peel and roughly chop the garlic and onion.
Peel the galangal root and chop finely. Grind to a paste with the onion and garlic pieces in the food processor.
Cut the chilies in half, remove the seeds and cut into large pieces. Grind these pieces to a paste in the food processor.
Cut the Looye JOYN tomatoes into segments and then chop into small chunks.
METHOD
Heat a pan with a tablespoon of sunflower oil and sauté the onion/garlic mixture.
Add the ground chilies and the shrimp paste to the pan and fry briefly.
Add to the Looye JOYN tomatoes segments to the pan.
Add vinegar and sugar and season with salt. Simmer the sambal for about 20 minutes until it reaches the desired consistency. Add some sugar if the sambal is too spicy.
SERVING TIPS!
Serve your homemade sambal goreng with Indonesian dishes
Fill hollowed out Looye JOYN tomatoes with sambal goreng and roast in the oven for 5 minutes or a little longer at 180°C. Before serving, put the 'lid' back on.
