Chili sin Carne with Looye JOYN tomatoes

This meatless chili is proper soul food. It is also an easy recipe to make on the hectic first few days of school.

METHOD
Peel the onion and cut it into wedges. Press the garlic. Cut the Looye JOYN tomatoes into wedges and the two peppers into strips.
Heat a splash of oil in a casserole dish and fry the onion and garlic over medium heat. After a few minutes, add the cumin, coriander and paprika powder and ground cayenne pepper. Stir-fry for 1 minute and then add the Looye JOYN tomatoes and peppers. Cook for 5 minutes, stirring frequently. Add the passata, corn ker-nels and kidney beans, stir and simmer for 20 minutes, covered.
Cook the rice according to the directions on the package.
Halve the avocado, remove the stone and cut the flesh into thin slices. Then gently push out of the peel to form a fan. Coarsely chop the coriander.
Serve the chili sin carne in bowls, garnish with a dollop of sour cream, the avocado fan and the coriander and serve with the rice.
Tip
Serve with tortilla chips, great for dipping!
