Roasted feta cheese with honey

METHOD
Pre-heat the oven to 200°C.
Cover a small earthenware baking dish or an ovenproof sauteuse with aluminium foil, put the feta in it and drizzle with olive oil. Bake for about 8 minutes until the cheese feels soft and resilient but has not melted.
Preheat the grill. Meanwhile, heat the honey in the microwave or over a pan with simmering water (au bain marie) until it is runny enough to brush onto the surface of the feta cheese with a pastry brush.
Grill the cheese until the top turns brown and just starts to bubble.
Transfer the feta cheese with the aluminium foil from the dish/pan onto a plate. Season with black pepper. Serve immediately with the toasted pita bread and sliced Looye Honeytomatoes.
If desired, add some nuts.
