Shakshuka

Shakshuka... say what?! The name alone sounds impressive. It is a one-pot dish of eggs in a Middle Eastern spicy sauce prepared with Looye JOYN tomatoes. And did you know that this dish tastes good for breakfast, lunch and dinner?
I want to make
- PREPARATION- Rinse the herbs and pat them dry. Finely chop the leaves. 
- Cut the Looye JOYN tomatoes into 1 cm (½ in.) cubes. 
- Remove the seeds from the peppers and chop into 1 cm (½ in.) cubes. 
- Peel and finely chop the onions and garlic. 
 
- HOW TO PREPARE- Heat the olive oil in a large frying pan and fry the onion with the garlic and the red and green peppers for 5 minutes. Add cumin seeds and paprika powder and fry for a few minutes. 
- Add the Looye JOYN tomato cubes and thyme and stir well. Simmer the sauce, covered, for 10 minutes. 
- Stir in half of the coriander and parsley. 
- Make four small wells in the sauce. Carefully break the eggs into the wells and cook, covered, for 5 minutes. 
- Sprinkle with the remaining herbs. Finish with cayenne pepper and finely ground sea salt to taste.
