Winter salad with crispy kale and Looye JOYN tomatoes

Simple, quick and chock-full of winter vegetables. You can still enjoy salads in winter, but serve them lukewarm and use warming and nourishing seasonal vegetables. Even tastier with Looye JOYN tomatoes!

Pre-heat the oven to 190°C.
Peel and grate the ginger and mix with the sesame oil and the juice of half a lime. Cut the Looye JOYN tomatoes into wedges. Put the kale in a mixing bowl, pour in the ginger-sesame oil and mix well with the leaves by kneading carefully.
Wash the sweet potato and cut into slices. Arrange together with the chickpeas and Looye JOYN tomatoes on a baking tray lined with baking paper, drizzle with a little olive oil and roast in the oven for 25 minutes. Turn over halfway through the cooking time. For the last 5 minutes, add the kale to the sweet potatoes and return to the oven.
For the dressing, mix the tahini with the mustard, maple syrup and soy sauce, dilute with a little water if necessary.
Slice the avocado flesh into strips.
Place the roasted winter vegetables in a salad bowl with the avocado and drizzle with the tahini-mustard dressing.
